Pacific Lush Shrimp Fajitas


  • 2 lb raw, peeled, deveined, large Pacific Lush Large Shrimp
  • ½ red pepper, thinly sliced
  • ½ green pepper, thinly sliced
  • ½ yellow pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 3 garlic cloves, finely chopped
  • 2 Tbsp crushed red pepper
  • 4 Tbsp fresh cilantro, chopped
  • 2 Tbsp olive oil
  • Salt and pepper


Thaw shrimp and dry with a paper towel, remove shrimp tail.  Heat pan, add oil and toss shrimp. Cook until the color changes to orange. Remove shrimp from pan and return pan to heat. Add onion and garlic and sauté until fragrant; add crushed red pepper and cook for approximately 4 minutes. Add the peppers, stir and cook all the ingredients for  5 minutes. Toss shrimp in the pan with all the vegetables, sprinkle with cilantro and mix all together. Season with salt and pepper to your taste. Serve with vegetables and rice. Enjoy!
